Here at Adams Ranch we have been integrating organic farming into our
operation
for 10 years. We use a natural approach to all nutritional needs of
our trees. This
includes cover cropping between rows that we mow and compost back into
the soil.
This cover crop allows a habitat for beneficial insects to thrive and
the clippings
provide a nitrogen source to the tree. As for weeds, we have been experimenting
with the use of animals, such as llamas to keep the control of over
growth.
We currently have four acres certified
under the National Organic Program and
40 more acres are in transition to becoming certified. Our processing
plant has been
inspected and certified to cure and bottle organic olives. In addition
to curing our
own olives, we now custom cure certified organic olives for other growers.
This year we have launched our new label
and product line “Raw Earth Organics.”
The term “Raw” means no heat processing. We cure our olives
in a slow nine-month
fermentation process to remove the bitterness, leaving the true olive
taste is desired.
Certified Organic Product Line
Sivilano This variety
of queen olives is picked green in September & October.
The fruit is distinguished by its large size, up to the size of a ping-pong
ball.
Commonly called the “Queen” olive, we machine size and pit
this olive for hand
stuffing and flavoring. The following item are available:
Whole or Pitted “Italian”
Style
Whole or Pitted Hot Chili Spiced
Hand Stuffed with Garlic or Jalapenos
Habanero Hot Spiced Whole Olives
Manzanilla This variety
is the most commonly commercially produced olive in
California. Ninety-five percent of all California production of this
variety is for the
black ripe “table olive”. Even we sell some of our excess
production to the “big”
canneries. Our groves are unique in that we harvest this variety several
times from
September through January as the fruit ripens. The first picking is
for a green
fermented olive. As the fruit starts to turn pink to purple we harvest
for our
“Kalamata Style” and Early olive oil. Late in the season
we harvest for our olive oil
and “Sun Dried” olives. The following items are available:

Mediterranean Blend This
is a mix of whole Sivilano and Manzanilla olives
of different cures and spiced the old fashioned way.
